THAI PICO DE GALLO
FOUR SERVINGS:
- 3 GoodFarms™ ROUND OR ROMA TOMATOES
- ½ RED ONION
- 2 SERRANO PEPPERS
- 1 LIME (JUICE)
- CILANTRO (A SMALL BUNCH)
- 2 TBSP OF FRESH GINGER
- 1 TBSP OF FRESH GARLIC
- ¼ CUP OF SPANISH PEANUTS
- SALT AND BLACK PEPPER (TO TASTE)
1. FINELY DICE THE TOMATOES, ONION, AND SERRANO PEPPERS.
2. MINCE THE GINGER AND THE GARLIC.
3. CHOP THE CILANTRO AND THE PEANUTS.
4. PUT IT ALL INTO A BOWL.
5. ADD THE SALT AND BLACK PEPPER.
6. ADD THE LIME JUICE.
7. MIX THE INGREDIENTS AND THEN LET IT SIT FOR AN HOUR TO ENHANCE THE FLAVOR.
