STRAWBERRY PECAN SALAD & STRAWBERRY VINAIGRETTE

FOUR SERVINGS:

  • 10 OZ OF MIXED GREENS
  • 2 CUPS OF GoodFarms™ STRAWBERRIES
  • 1 CUP OF ROQUEFORT BLUE CHEESE
  • ½ CUP OF CANDIED PECANS
  • 1 TBSP OF CHIA SEEDS

 

STRAWBERRY VINAIGRETTE:

  • 1 CUP OF COLD PRESSED EXTRA VIRGIN OLIVE OIL
  • 1 CUP OF GoodFarms™ STRAWBERRIES
  • ⅓ CUP OF GRADE A MAPLE SYRUP
  • ¼ CUP OF SHERRY VINEGAR
  • 1 TSP OF HIMALAYAN SALT
  • ½ TSP OF GROUND BLACK PEPPER

 

1. RINSE THE GREENS AND STRAWBERRIES.

 

2. CUT THE STRAWBERRIES FOR THE SALAD INTO SLICES AND CRUMBLE THE BLUE CHEESE.

 

3. PUT THE MIXED GREENS INTO A BOWL, ADD THE REST OF THE SALAD INGREDIENTS, THEN MIX.

 

4. BLEND ALL THE VINAIGRETTE INGREDIENTS TOGETHER UNTIL THEY ACHIEVE A SMOOTH CONSISTENCY.

 

5. POUR THE VINAIGRETTE ONTO THE SALAD AND ENJOY!
