MEDITERRANEAN PICO DE GALLO
FOUR SERVINGS:
- 3-4 GoodFarms™ ROMA OR ROUND TOMATOES
- ½ ONION
- 1 CUCUMBER
- 1 AVOCADO
- 1-2 JALAPEÑO PEPPERS
- CILANTRO (A SMALL BUNCH)
- ½ CUP OF PARSLEY
- 2 PINCHES OF OREGANO
- SALT AND BLACK PEPPER (TO TASTE)
- 2 LARGE LIMES (JUICE)
- ¼ CUP OF COTIJA CHEESE (OPTIONAL)
1. FINELY DICE THE TOMATOES, ONION, AND JALAPEÑO PEPPERS.
2. PEEL AND CHOP THE CUCUMBER.
3. CHOP THE AVOCADO INTO SMALL CUBES.
4. FINELY CHOP THE CILANTRO AND THE PARSLEY.
5. PUT IT ALL INTO A BOWL.
6. ADD THE OREGANO, SALT, AND BLACK PEPPER.
7. ADD THE LIME JUICE.
8. MIX AND ENJOY!
