HUEVOS MEXICANOS

FOUR SERVINGS:

  • 4 EGGS
  • 1 GoodFarms™ ROUND OR ROMA TOMATOES
  • ¼ WHITE ONION
  • 1 JALAPEÑO PEPPER
  • 2 TBSP OF MILK
  • SALT AND BLACK PEPPER (TO TASTE)
  • 1 TSP OF VEGETABLE OIL

 

1. DICE THE TOMATO, ONION, AND JALAPEÑO, THEN SAUTE THEM TOGETHER IN OIL FOR THREE MINUTES.

 

2. WHISK THE EGGS IN A BOWL, THEN ADD MILK.

 

3. POUR THE EGG MIXTURE INTO A SKILLET, THEN ADD THE VEGETABLES.

 

4. COOK UNTIL THE EGGS ARE SCRAMBLED.
