
HUEVOS MEXICANOS
FOUR SERVINGS:
- 4 EGGS
- 1 GoodFarms™ ROUND OR ROMA TOMATO
- ¼ WHITE ONION
- 1 JALAPEÑO PEPPER
- 2 TBSP OF MILK
- SALT AND BLACK PEPPER (TO TASTE)
- 1 TSP OF VEGETABLE OIL
1. DICE THE TOMATO, ONION, AND JALAPEÑO, THEN SAUTÉ THEM TOGETHER IN OIL FOR THREE MINUTES.
2. WHISK THE EGGS IN A BOWL, THEN ADD MILK.
3. POUR THE EGG MIXTURE INTO A SKILLET, THEN ADD THE VEGETABLES.
4. COOK UNTIL THE EGGS ARE SCRAMBLED.
