GRAPE TOMATO & PERSIAN CUCUMBER SALAD
FAMILY SIZE:
- 1 CONTAINER OF GoodFarms™ GRAPE TOMATOES
- 2 PERSIAN CUCUMBERS
- ½ OF A LEMON
- ¼ CUP OF EXTRA VIRGIN OLIVE OIL
- 2 TBSP OF APPLE CIDER VINEGAR
- SEA SALT (TO TASTE)
1. SLICE THE CUCUMBERS IN HALF LENGTHWISE, THEN CUT THEM INTO SMALL PIECES. (OPTIONALLY, SLICE THE GRAPE TOMATOES IN HALF LENGTHWISE.)
2. PLACE THE GRAPE TOMATOES AND CUCUMBERS IN A BOWL.
3. POUR ON THE OLIVE OIL, VINEGAR, AND JUICE FROM THE LEMON.
4. ADD THE SEA SALT, THEN MIX.
- FOR EXTRA FLAVOR, ADD DICED AVOCADO!
