GRAPE TOMATO & ASPARAGUS OMELET

TWO SERVINGS:

  • ¼ CUP OF SLICED GoodFarms™ GRAPE TOMATOES
  • ¼ CUP OF DICED ASPARAGUS
  • 2 EGGS
  • ⅛ CUP OF SLICED ONION
  • 2 TBSP OF AVOCADO OR OLIVE OIL
  • 1 PINCH OF CRUSHED RED PEPPER
  • SALT, BLACK PEPPER, AND COOKING OIL (TO TASTE)

 

1. PREHEAT A FRYING PAN, THEN ADD AND SPREAD THE AVOCADO OR OLIVE OIL.

 

2. PLACE THE ONION, ASPARAGUS, AND RED PEPPER IN THE PAN, THEN SAUTÉ THEM TOGETHER FOR TWO TO THREE MINUTES.

 

3. WHISK THE EGGS IN A BOWL, THEN POUR INTO PAN.

 

4. COVER THE PAN WITH A LID AND COOK ON MEDIUM HEAT FOR AROUND TWO MINUTES.

 

5. FLIP OMELET OVER, THEN LET COOK IN COVERED PAN FOR AROUND TWO MORE MINUTES.

 

6. PLACE OMELET ON A DISH OF YOUR CHOICE, ADD SLICED GRAPE TOMATOES ON TOP, SPRINKLE ON OIL, SALT, AND PEPPER, THEN ENJOY!
