BLUEBERRY BANANA PANCAKES & BLUEBERRY SYRUP
TWO SERVINGS:
- ½ CUP OF Limited Edition™ BLUEBERRIES (FOR PANCAKES)
- 1 BANANA
- ½ CUP OF OAT MILK
- 4 EGGS
- 1 CUP OF ALMOND FLOUR
- ½ CUP OF COCONUT FLOUR
- 1 TBSP OF BAKING POWDER
- 1 TBSP OF BAKING SODA
- 1 PINCH OF POWDERED CINNAMON
- 3 TBSP OF OLIVE OIL
- 3 TBSP OF BUTTER OR GHEE
- ½ CUP OF Limited Edition™ BLUEBERRIES (FOR SYRUP)
- ¼ CUP OF MAPLE SYRUP
1. TO MAKE THE BATTER, WHISK THE EGGS, BLUEBERRIES, OAT MILK, AND OLIVE OIL TOGETHER IN A LARGE BOWL. THEN ADD THE FLOURS, CINNAMON, AND BAKING INGREDIENTS AND MIX UNTIL BLENDED.
2. TO MAKE EACH PANCAKE (4-6), HEAT A LIGHTLY OILED SKILLET ON MEDIUM AND THEN POUR IN THE BATTER. COOK UNTIL EDGES ARE DRY, THEN ADD BUTTER OR GHEE ON TOP.
3. TO MAKE THE SYRUP, BLEND THE BLUEBERRIES AND MAPLE SYRUP TOGETHER.
4. STACK THE PANCAKES ON ONE OR TWO PLATES.
5. ADD SLICED BANANA ON TOP AND, IF DESIRED, MORE BLUEBERRIES.
6. POUR ON THE SYRUP AND ENJOY!
